Happy Monday!

So, I’m just a little late…just a little bit…but the past few Monday’s have not been so Barefoot, but instead pretty busy…have you ever had a period of time where your schedule is just jam packed? Top that off with the Atkins diet and Piloxing work outs and you’ll be me. When I found out that you could occasionally have an Atkins dessert bar, I went to Target and bought…6 boxes. Food Therapy, right?!

It’s almost over…my husband and I will soon be Bahamas bound to our amazingly fun honeymoon spot, Sandal’s Emerald Bay, enjoying every meal, especially the sweet treats! That’s what summer vacation should be.


I am really excited to share my Red White & Blue Berry Vintage Ice Box Cake with you! Phew, that was long, the good news it’s a no-bake “cake” perfect for summer, especially a cook out like the Fourth of July when I enjoyed mine.  My Dad has been making this cake since I was little and it’s a family favorite. It’s one of those old-fashioned family recipes that many families probably still make. I recently talked to a coworker who’s Mom makes it too and it made me smile. I had to try it out for myself, with a holiday twist.

Let’s reminisce on the pre-diet good times with my step-by-step recipe, are you ready? Let’s take a walk down memory lane.

Red White & Blue Berry Ice Box Cake

{Cait’s Food Therapy}

1. Line a baking dish with Graham Crackers:

2. After cooking 2 boxes of chocolate fudge pudding with whole milk according to package directions, whisking constantly (so it isn’t lumpy like mine!), let it completely cool in the refrigerator. When cool, using a spatula, smooth out 1/2 of the pudding on top of the graham cracker layer:

3. Place Graham crackers on top of that:

4. Top with the second half of chocolate pudding:

5. Top with a third layer of Graham crackers:

6. Cover Graham Crackers with Cool Whip:

7. Grab your raspberries,


8. Your blueberries,


9. and your strawberries:


10. and decorate away! Chill in the refrigerator for at least and hour,  enjoy those hot dogs and hamburgers or my vegetarian friends that cole slaw and potato salad first!

The Graham Crackers soften to cake consistency and between the chocolate, Cool Whip and berries there is so much flavor.

It’s a cold, light cake which is nice for those hot days! It’s really verstatile too, you don’t need the Cool Whip (that was my little touch), you could use vanilla pudding or play with toppings…hmm…ideas…
