Barefoot Mondays: Tomato Crostini with Whipped Feta

Hosting a dinner party? A good friend coming over to catch up?  Wining & dining? Or like me, having a fun wedding party get together? Besides your common chips &dip, cheese & crackers, Barefoot Contessa has an easy, delicious and rustically beautiful hors d’oeuvre for you!

Feta and cream cheese blended together? That’s whipped feta. I warn you, this is dangerous stuff.

Mrs. Garten recommends preparing the tomatoes up to an hour before serving and since we were coming back from bridesmaids dress shopping, I decided to prep them while the girls mingled. As they talked healthy foods, I drizzled, ok, poured olive oil over thick slices of fresh bread.

Leana told us how her fiancé, Joe proposed. It was very romantic. I remember how in love they looked on my wedding day, talking, laughing, dancing, the way that they looked at each other…

I knew that it was only a matter of time! I am so incredibly happy for her and Joe.

It’s crazy to think that when October comes and this beautiful bride walks down the isle, we will both me married. Leana and I met in kindergarten. Miss Kelly’s class.  We hung out at each other’s houses all the time. I remember she used to make me pretend I was pregnant, with a pillow under my shirt while she listened to the “baby” with her toy stethoscope, but I got her back by putting on that titanic play…how we complained about our annoying little brothers (who are now taller than us). Leana is still the sweet, kind girl I met. She’s a wonderful friend.

Where has time gone? Talk about a quarter life crisis…

This turned out to be the perfect recipe. Leana and I are die hard feta fans. Plus cherry tomatoes, pine nuts, basil, come on. These were a huge hit with the girls! I was so glad! Rustic and delicious, these were a great end to a lovely day with this “rockin’” bridal party!

Congrats Leana <3 I can’t wait for your wedding day and all of the fun leading up to it.
